Having the Craic in Dundalk Fm .Made a lovely greek salad.very fresh and tasty.

Iced Lollies with Cherries

Cherry Ice Cream

500ml milk
250grm preserved cherries
8 egg yolks
500ml semi whipped cream
100grm crunchy nut cornflake crumb (blitz like breadcrumbs)

Bring Milk to the boil.Blitz cherries.Beat egg yolks up with the cherries until stiff. Continue stirring and add the boiling milk. Return to the heat and thicken while stirring. Cool in a bath of iced water.
Add the semi-whipped cream and turn in the ice cream maker.Transfer then to freezer.
Keep in the freezer at for 2 days. Scoop out attractive balls of cherry ice cream.
Roll the balls in crunchy nut cornflakes and insert stick,decorate plates with cherries and and chocolate sauce.
